the perfect pancakes

During lent i always fall a bit low on the sugar intake .. this year I held my tradition and gave up chocolate, (my only weakness in life), cake, sweets, crisps, biscuits and coffee..
As much as some people decide to take it out on me and say surely i can't eat pancakes.. you've gotta give a girl some respect! I allow myself a treat once in a while, (to keep my sane), so despite the 'pancake' name, they hardly represent 'cakes'... they're more related to yorkshire puddings.. which are definitely acceptable in my boundaries!
Anyway, enough of me trying to defend myself... the purpose of this post was to share my new found american pancakes recipe.. I cant remember where I found it, but they were that good I can whip them up in minutes now that I have the recipe memorised.

And damn, they are good!!!!!

So... 

135g self raising flour (can use plain, but the self raising makes them more 'poofey' :) )
2 tbsp sugar
1 tsp baking powder
1/2 tsp of salt

then 2tbsp butter, melted (and cooled)
130ml milk
1 egg

  • Mix all the dry ingredients while the butter melts, (just in a mug for about 10 seconds in the microwave, stir, then a further 10 seconds, or till melted).
  • Then pour out your milk into a jug, whisk in the egg, then follow with the butter and mix. 
  • Pour this into the dry mix and beat until a thick batter is formed.
  • Heat up your pan with a little oil or butter, and use a tbsp or large serving spoon (depending how big you want your pancakes!) to drop into the ready hot pan.
  • Flip over after a minute or so and cook until both sides are golden brown.

Serve hot with your topping, personal favourite is a large helping of golden syrup.
